Preheat the oven to 500F. This beef can wait for your guests! Brush the beef with oil, and sprinkle with salt and pepper. Heat a heavy casserole without fat and brown the meat all over, over a hight heat. Put the beef in an oven pan and put aside until the beginning of the meal. SautÄ the zucchini in half oil, half butter stirring often. Salt the tomatoes and 5 minutes later turn them over on a rack to drain. Fill them with half parsley, half breadcrumbs and some garlic if you like. Cook them in the oven and remove when they start to brown. Roast the meat for 12 to 15 minutes. Work the rest of the butter with a tablespoon parsley, salt and pepper and spread it over the roast, giving it a ready-made sauce when it is carved.
